The vines are cultivated with the utmost respect for nature, and in accordance with the weather and the earth. Grapes are manually harvested, macerated for 7 to 9 days without stems, then vinified with indigenous yeasts before being barrel aged (30 50% new wood) for 12 16 months and finally polish
