2023 Chablis, Cairn, Domaine 47°N 3°E, Guillaume Michaut, BurgundyThis is a special cuve made from a 0. 39 hectare plot of vines planted by Guillaumes father in 2000 in a tiny valley in Beine. It is fermented in tank and then aged for 16 months, half in stainless steel and half in used 500 litre oak demi muids. Guillaume has dialled back the oak this year, allowing the fruit to shine through more clearly. Its really pure, with a gentle grilled reduction and more weight than his regular Chablis.
